Week One BONUS POST! Rubadub Don't?
There's quite a few rubs out there..Sweet, savory, spicy, you name it, it probably exists in rub form. There is also alot of talk about using rubs when cooking meats the way we like to cook em. I certainly have gone done the rabbit hole of rubs in my time..but have also landed back where many land... Most times, Simple is better.
So for this bonus post let's round up a bunch of different takes on using a rub when it comes to smokin' meats.
But first.......I need to tell ya about the first rub I ever used. I haven't made it in awhile..but maybe I should? It always got great reactions..was that because it was the only good thing about those early cooks? Anyway, it's the famous, Meathead's Memphis Dust. Although, I seem to recall I backed waaaaay off the Ginger and the Rosemary. While, I can't say that I have visited that site in some time...I'll always be thankful for getting me my start.
Ok, What's up Rub-a-Dub-Dubbbz
As usual we start with the professor Joe Yim of Knox Ave BBQ.. His go to brisket rub starts 50/50 16 mesh black pepper/diamond kosher salt..then he adds a bit more pepper and some garlic powder. You can see him talk about it here. He also talks shaker vs dredging... Gotta love the dredge.
Is Lawry's some BBQ joint's "secret" weapon? Seems unlikely, but sometimes I use it!
MeatChurch makes super tasty rubs - All of em are bangin' quite frankly. I use Holy Cow and Voodoo on wings and whole chickens often. I love the sweet, Honey Hog and its Hot counterpart are great..I use them a bit less these days - but try em on ribs or a butt.
Chuds SPG - a classic. Use it, abuse it. I need to try his snakebite and other rubs.
Kosmos makes quite a few different rubs..I find 'em a bit salty for my taste..I have had success with their wing dust though. Love the salt n vinegar.
Ok, so this isn't exactly Rub specific...but watch Ant's trip to the #1 BBQ Spot in America...and listen closely.. Sounds like flavor profiles are getting far more elevated in the modern BBQ world.

Whatching The Youtubes & Finding Hidden Gems
This brings me to my last thought for this bonus post. In my experience, from beer brewin' to bbq and everything in between....the best nuggets of knowledge are often hidden amongst the meatier content of these videos. Often, its quieter comments, or small snippets said in passing... But if you're paying attention it can be the gold.
